Guest guest Posted October 6, 2000 Report Share Posted October 6, 2000 This is easy, fast, inexpensive, and tasty. It's a great meal with a crusty herb bread and a green salad or sautéed greens. White Bean and Tomato Casserole 1 1/2 C. fresh whole wheat bread crumbs 2 T. extra virgin olive oil salt and pepper 2 medium onions, chopped fine 3 garlic cloves, minced 1 28 oz. can of chopped tomatoes, or fresh equivalent 2 15 oz. cans of white beans, drained and rinsed 1 1/2 t. fresh sage or thyme, chopped Preheat broiler. Mix bread crumbs, 1 T. olive oil, salt and pepper in small bowl. Set aside. Heat remaining oil in a pan over medium heat. Sauté onions until softened, about four minutes. Add garlic until fragrant, about one minute. Stir in tomatoes, beans, and herb. Season with salt and pepper to taste. Bring to a boil, reduce heat to simmer, and cook about four minutes, or until thickened. Transfer mixture into a casserole dish. Sprinkle bread crumbs evenly over beans. Broil until crumbs begin to become golden, about 3-4 minutes. Be careful not to burn. Let settle a few minutes before eating. Quote Link to comment Share on other sites More sharing options...
