Guest guest Posted October 27, 2000 Report Share Posted October 27, 2000 I have a 12 year old daughter, and she likes to pack her own lunch; her favorite is chopped lettuce and tomato, mixed, with a few tortilla chips (check the ingredients) on the side for dipping. Sometimes she adds beans (chick peas, black beans, etc.). Sandwiches ideas: apple and cheese (soy or no-rennet); apple and peanut butter and honey; banana and peanut butter; tomato, cucumber and sprouts; tomato and avocado; grilled chopped or raw shredded vegetables in a pita pocket or tortilla; tomato and sliced pickle on a bun... the list is endless when you stop thinking of conventional sandwiches or burgers. Almost any leftover vegetable can be put between a couple of slices of bread, or eaten with crackers to make a good lunch. Good luck with your mom! " lol To lol- You are probably bored by now by peanut butter and jelly sandwhiches so here are some other ideas: 1. first, try a balanced meal with a protein source, fruit and vegetable. 2. try a salad with your favorite veggies and lettuce with kidney beans, garbanzo beans or a hard boiled egg. Bring your own dressing in a small plastic container with a lid. Make sure you put a freezer pack in your lunch so that your lunch will last till lunchtime and not spoil. 3. 2 slices of pizza (if you don't mind it cold) 4. a bagel sandwich with hummus (for protein) with lettuce, tomato and cheese 5. a bagel with cream cheese If you had access to a microwave you could eat the night befores' leftovers- just put it in tupperware container or something microwave safe. With a microwave you have more options, such as veggie lasagna, rice and beans, spaghetti with tom sauce and tofu, etc. Hope this helps. Good luck. I take a tortilla (usually sun-dried tomato) and put chopped salad items in it, tofu, cheese (if you eat it), black olives , some sort of dressing and then roll it up. Hummus sandwiches are a hit too with mustard, lettuce and tomato. He also likes to have a bag with pretzles and raisins mixed together. I know that there is a book out there somewhere on being a teenager and vegetarian - it probably has some good suggestions for lunches. Guest guest Posted October 30, 2000 Report Share Posted October 30, 2000 My son is 9 and a lacto-ovo vegetarian - He eats the same things as Karen's daughter but some of the other things that he eats are : veggie pepperoni and cheese sub or sandwich leftover spaghetti or cheese ravioli - we microwave it in the morning and put it in a small thermos (soup would work too) raw spinach, shredded carrot, shredded cheese rolled up in a tortilla yogurt and fruit I bought a couple cookbooks from amazon.com and really liked them (they were suggested by another person in this group) The Teen's Vegetarian Cookbook by Judy Krizmanic Vegetables Rock:A Complete Guide for Teenage Vegetarians by Stephanie Pierson They would have some good ideas for you also Good luck Deb - Karen L.
