Another vegetarian childrens book I would recommend is called "Victor the Vegetarian," which can also be ordered through amazon.com. Here is a fabulous recipe I got from vegsource.com. Me and my 16 month old ate the whole loaf all in one day! It was submitted by actor and activist Alicia Silverstone. There are a bunch of other holiday recipes there http://www.vegsource.com/articles/thanks_alicia.htm Holiday Lentil LoafIngredients:1 small onion1 clove garlic2 stalks celery2 tsp sage3 cups cooked lentils3 cups cooked wild rice (you can use a wild rice/brown rice mix here too)1/2 cup chopped walnuts1/4 cup whole wheat breadcrumbs2 Tbsp vinegar2 egg equivalents2 Tbsp whole wheat flourfresh ground black pepper and sea saltDirections:Preheat oven to 350 F.Chop onion and celery finely, and crush the garlic clove. Spray a fraying panwith non-stick spray, and saute the onion, garlic and celery until onion istranslucent. Add the sage. Combine all ingredients in a large bowl and mixwell. Spray a loaf pan with non-stick spray and fill the loaf pan with themixture. Press down. Bake 30 minutes covered, 10 minutes uncovered. Let standfor 5-10 minutes before cutting and serving.Enjoy!
