My son loves tofu. He started eating it as an infant and is now almost 3 years

old.

Sometimes he wanted cubes of it before I prepared them in any way! I would mash

it into his other foods, marinate it in fruit juice, scramble it, etc..

His other favorite right now is peanut butter - he Always wants it. I'm lucky

that we've at least moved on to sandwiches that have other things in it besides

pb (like w/ bananas, raisins, things like that...)

If your son can eat peanut butter or other nut butters, you could mix a little

of that into his foods as well. (I'm going to be trying it on broccoli - a

recipe I came across recently).

There's also tempeh, tvp, and things like that - what do you and your husband

usually eat? When my son started eating more solid foods, he was practically

jumping out of his chair to reach anything on my plate - Always Mommy's

plate.... With that in

mind, I started preparing whatever we were eating right along for him. He ate

pretty much the same things as my husband and I.

Soups were another biggie - or things with beans in it. I would alternate beans

with tofu in his pasta and sauce as well as other dishes. My son also eats a

lot of hummus - he loves that too!
