Please keep in mind that we are vegetarian and some of these products can be substitute for what apply to your chosen diet. It is a bit long to prepare yet so much fun and the result is yum!To save time, you bake it in the microwave. Hope you like it: " GARDEN VEGETABLE QUICHE " (From " Vegetarian Times Cookbook " /1995 edition) CRUST= -2 cups cooked brown rice -Some egg substitute for the equivalent of one egg white(or another binding agent) -1 Tbsp chopped fresh parsley (1 tps dried) -one quarter tsp garlic powder -one quarter seasoned salt *CRUST: In bowl, combine all ingredients. Mix well. Press the mixture over the bottom and up the sides of a 9-inches pie plate. MIcrowave at high until crust is set, about 1 to 2 minutes, rotating plate twice. Set aside. FILLING= -1 cup thinly sliced red onion -1 cup asparagus tips (if canned, drain and dry well!) -half a cup chopped carrot -1 tsp margarine -one 10 ounce carton egg substitute (from the natural food store) -one third cup soy milk -2 Tbsp all-purpose flour (or other thickening agent) -1 Tbsp soy parmesan cheese (or other soy cheese) -one quarter tsp died italian seasoning *FILLING: In 2 quarts casserole dish, combine vegetables and margarine. Cover. Microwave at high 4 to 6 minutes, stirring once or twice. Set aside. Cool slightly. In small bowl, combine the rest of the ingredients. Then mix together both mixtures. Microwave the combine mixture at MEDIUM power, uncovered, until the mixture just begin to set around the edges, stirring every 2 minutes, for a total of 4 to 6 minutes. POUR the egg-substitue mixture into the prepared crust. Microwave at MEDIUM power (50%) until set into the center, about 10 to 12 minutes, rotating the pie plate 3 to 4 times during cooking.. let sirt on your counter for 5 minutes before serving. VOILA, a hourlong quiche in a few minutes! Great with a giant green salad! I do add more veggies such as peppers, celery, regular and/or sweet potatoes and so on. Whatever is in the crisper.
