Quote- " Heating flax oil and other polyunsaturated fats turns the good cis form of the fatty acids into the bad trans form. " And-- " Flax [seeds] can be used in baking...the water absorbed by the seeds keeps the oil from overheating. " Not much of an explanation, I know, but I thought I'd add this to the discussion.
