Guest guest
Hi Jessica, I'm also a single mom living with omnivorous family (my dad is an avid hunter and fisherman!). My daughter, 19 months old loves, plain tofu, beans, hummus, yams (cube and steam for easy self feeding), bread, tahini, pasta, avacado, brown rice (overcooked a bit so she can eat it in clumps by the hand full), and any kind of fruit. She is becoming a little resistant to vegetables, so I have been devising ways to sneak them into her food. I blend some silken tofu with some steamed greens (kale, collards, or spinach), shredded carrots, tahini, lemon juice, garlic, onion powder, and whatever else I can think of. She loves this as a dip or a spread. Another good thing to try with silken tofu is fruit smoothies. Blend frozen bananas and berries or peaches with soy milk or juice, and flax seed oil. Try to get some good vegan cook books to start with--my favorite is Vegan Vittles by Joanne Stephaniak, my toddler loves most of her recipes. Good luck, you're making the best choice for you and your daughter by going veg!
