New, with questions...

Hello,

 

My name is Kim and I am new here. I was wondering if

anyone could help me with a few questions? First, I

have ordered Back To Basics grain mill... is this a

good one? Also, can someone reccomend a dehydrator?

And my last and unrelated to the first two question:

When cooking dry beans... does your body eventually

get used to them and not get so gassy? My 3 year old

had black eyed peas on rice last night and tooted for

hours afterward. :)

Kim,

 

Gas is caused by the starches in the beans which are hard to digest. It

helps to rinse the beans after soaking and cook them in fresh, clean water.

I also rinse them again after cooking (the foam you sometimes see on top of

the water when you cook is the starches). Also, adding a piece of Kombu

(seaweed) to the cooking water helps to break down the starches and make

them more digestible. Hope this helps.

Hi Kim,

Good news for you nose. The body does eventually get use to beans. If you put

them as a constant into your diet, 2-3x a week the gaseous effect will

eventually dissapear, you just need time to adjust. And after 3x a week you can

eat them every day if that is what you want. That is how i did it... good luck

You do get used to them, but how they are cooked also makes a difference.

They have to be thoroughly cooked, and thoroughly chewed (hard with a 3 year

old!). In some recipes, you can put some kombu at the bottom of the pot,

that helps with digestion. Or, if you are using a thickener, use kudzu, that

is also a digestion aid.

Another tip on making beans more digestible is to rinse them three times!

You rinse the beans and then put them in water to soak overnight then before

you cook them rinse them twice more. This really helped at my house. (This

is with dried beans of course :)
