Guest guest Posted November 2, 2000 Report Share Posted November 2, 2000 This is what my 15 month old and I eat on an average day: Breakfast: For something quick--Oatmeal or cream of wheat with raisins and soymilk, cereal with soy milk and bananas, or silken tofu/ soy yogurt fruit smoothie with calcium fortified OJ and flax seed oil. If I have time: scrambled tofu with whatever veggies I have sitting around, banana or apple pancakes (usually so good you don't need syrup) Lunch: Pinto, kidney, or black bean burritos on whole wheat flour tortillas with veggies--lettuce, tomatoes, shredded carrots, green onions, avacado whatever you've got in the fridge. Also great with silken tofu sour cream. Hummmus and vegetable sandwich Green salad with garbanzo or kidney beans or cold cubed marinated tofu Peanut/almond butter and jelly sandwiches Snacks: Fruit Corn chips and bean or silken tofu sour cream dip Homemade cookies Nuts Raisins Dried fruit Dinner: Chili served over brown rice Soup--Black bean, lentil, or tempeh stew Marinated tofu--baked or pan fried, yellow rice, garlic kale tomato saute (great with balsamic vinegar) Potatoes--baked with silken tofu sour cream Pasta with tvp sauce Tofu stuffed shells Stir fries Since I don't have much time to cook, I love inventing stews and soups that have everything I need in them to make a balanced meal, that way I don't have to spend time on side dishes. I always keep a good stock of canned beans and tortillas on hand for quick meals. I only have one vegan cookbook and it is fabulous--Vegan Vittles by Joanne Stephaniak. Not to bore everyone, but once again I must remind ya all that I am a person in transition and to see that what you eat in a typical day was very close to my choices as well, and made me realize I am farther along on this journey than I give myself credit for....not to mention the 30 lbs I have lost in the last 6 months! They use photo therapy now, and the best thing for your baby is to breastfeed. Check with a trained lactation consultant and stay in touch with some one from the La Leche League for information and support. A lot of doctors out there don't have a good grasp about the benefits of breastfeeding and are not always supportive of it. A good way to find out is to ask them their opinion on how long a family should breastfeed. If you do not have access to a good Lactation consultant Evergreen Hospital in Washington State is a good place to call. They help handle questions and concerns specifically about breast feeding from all over the world. I can provide the number if you want it. Just let me know.
