An Italian friend of mine told me that it's an authentic southern

Italian recipe for children, their equivalent of the U.S.'s macaroni &

cheese. He taught me to use the pasta that looks like a macaroni cut in

half (basically, thick circles) and to add parmesan cheese (soy versions

available) instead of the walnuts. But I like the sound of the

walnuts! I also put in sauteed onions, to boost the total nutritional

value.

Liz,

Oh neat! The good thing about the little shell-type pasta is that the

peas get lodged inside some of the shells, which is kind of interesting

to kids. Susan

My 2 yr old loves pasta with flax seed oil and braggs

liquid aminos. We also make a sesame parmesan and

various cheez sauces.
