Greetings all,

 

A couple of other things.... I called a local honey-producer asking

if their honey came from " humane producers. " They honestly said no,

and volunteered that most of their producers ship their bees to

California during the winter months to pollinate the fruit trees

there. Needless to say, many of those bees don't survive the

transport there and back.

 

There is a humane producer who sells honey at a farmers' market

nearby. They do not substitute syrup to the bees for over-wintering,

they leave honey for them, and they do not use any unnatural methods

of queen mating, etc. I would be willing to use their product if it

were a necessity for a recipe (maybe Greek baklava, for example) but

it's easier just not to use it. I substitute maple syrup instead.
