Guest guest Posted May 24, 2001 Report Share Posted May 24, 2001 Mashed Potato Pie from The Mormon Diet Cookbook 5 med. potatoes, peeled and chopped 1 c. water 1/4 c. soy milk salt to taste (optional) 1/8 tsp. pepper 3 lg. carrots, cut into 1 1/2 " julienne strips 1 10oz. pkg. frozen green peas, thawed and drained Green pepper rings Fresh parsley sprigs In medium saucepan, cook potatoes in 1/2 cup boiling water over low heat until tender. Drain well; mash until smooth. Add soy milk, salt and pepper; stir until smooth. In a large saucepan, cook carrots in 1/2 cup boiling water over low heat until crisp-tender, about 5 minutes. Stand carrots upright around inside edge of a round 1 1/2 quart casserole dish. Cover bottom of dish with peas. Spoon potatoes on top of peas, spreading to carrots. Bake at 350* for 20 minutes. Garnish with green peppers and parsley. (personally, I would put the green peppers on before baking.)
