Guest guest Posted June 12, 2001 Report Share Posted June 12, 2001 Summer Veggie Stuffed Shells * * * * By: Jo-Ann Johnson 6-8 Zucchini 6-8 Yellow Squash 2 Carrots 1 Vidalia onion 4 Cloves Garlic 4 tbsp Olive oil 1 C maranara sauce Slice all the veggies and sautee in Olive Oil until tender. When done place in food processor on " chop " mode until well combined ( a few seconds) Let mixture sit until cooled Meanwhile, cook 1 lb Jumbo shells according to package directions. When done, drain and place in pot of cool water to prevent sticking while assembly. Stuff shells with the veggie mixture and place on a 9X13 baking sheet over 1 cup maranara sauce. Bake at 350 degrees until hot, about 10 minutes and serve! Delicious! Can substitute other seasonal veggies if desired. I want to put it in a baking dish and pour the sauce all over the shells. I just went out and got all the ingredients to make it, it sounds good! My supermarket didn't have vidalia onions, though, I asked the produce manager and he gave me Hawaiian sweet onions, which were $4 for a bag of 4 large onions (waaaaaay overpriced, imo) but I didn't have much choice (and didn't want to schlep the baby and toddler to yet another store!
