Vegan marshmallows!

 

I know it is hard to find vegan marshmallows!! But looky here!!

 

Got this from www.healthy-eating.com:

 

Vegan Marshmallows

* 2 1/2 TBSPS Veg Gelatin (such as Emes Kosher Gel)

* 1 1/2 CUP Sugar

* 1 CUP light corn syrup

* 1/2 cup COLD water

* 1/2 cup room temperature water

* 1/4 TSP salt *2 TBSPS Vanilla Extract (or the flavoring of your choice)

* Corn starch for dusting

 

1.Combine Gel and 1/2 cup COLD water in the bowl of a mixer with a whisk

attachment. Let stand for 1/2 an hour.

 

2. Mix the sugar, corn syrup, salt and 1/2 cup water in a saucepan. Stir it

over low heat until the sugar is dissolved and a syrup has formed.

 

3. Cook it until firmball stage [244 degrees Farenheit] (I *strongly*

reccomend that you get a candy thermometer if you don't already have one).

Remove the pan from heat, slowly and carefully pour the syrup into the

gelatin/water mixture in the bowl of your mixer. Beat the mixture at high

speed until thick, white and tripled in size (approximately 15 minutes. If

you want to stop before then, however, you get marshmallow creme which you

can store in a jar and use like the commercial stuff). Add the vanilla (or

flavoring of your choice) and beat just long enough to mix it.

 

4. Dust an 8X12 " glass baking pan with corn starch. Pour mixture into it,

dust the top with more corn starch. Wet your hands and pat the mixture to

smooth out the top. Dust it again.

 

5. Let it stand overnight to dry out, uncovered. The next morning, turn the

" marshmallow cake " onto a board and cut it into small pieces with a dry,

HOT

knife. Dust again.

 

Makes about 45 Marshmallows.
