cookies made with oil instead of margarine?

Jo-Ann,

The New Farm Vegetarian Cookbook offers this chocolate-chip cookie recipe

made with oil:

2 1/2 cups of flour

1 1/2 tsp. baking powder

1/2 tsp. salt

1/2 cup brown sugar

1/2 cup white sugar

1/2 cup oil

1/4 cup water

1 tsp. vanilla

1 cup chocolate chips

Sift flour, baking powder and salt. Mix sugars and stir in oil. Add water

and vanilla and beat till blended. Add dry ingredients to creamed mixture

and mix well. Add chocolate chips, mix well. Drop by teaspoons on oiled

cookie sheets. Bake at 350 degrees for 15 minutes or until golden brown on

the bottom.

I've made these a few times and even my non-veg friends like them.

Merry Meet Jo-Ann. I don't usually use Oil to make cookies, but if

you are worried about the Hydrogenated Oils, and thats why you want

to use regular Oil, I'd say try and find one of the good brands of

non-hydrogenated Vegan Margarine, such as Spectrum or Earth

Balance... (I preffer Earth Balance, personally... VERY good stuff).

 

Just a suggestion. Also, you an often times substitute regular oil in

your cookie recipes, if you decrease the oil somewhat (Half usually

worked for me). Depending on what recipe it is, too, of course.

Experimenting with recipes can often be very rewarding... (Don't get

me wrong, I've had some serious Doozies! But getting creative can

often be rewarding...)
