Guest guest Posted June 30, 2001 Report Share Posted June 30, 2001 I did it! I created a vegan Banana Bread that I absolutely LOVE! Here it is... 2 sticks of vegan margarine softened at room temp( I used Willow Run soy margarine) 3 ripe bananas mashed 2 tbsp pure vanilla extract 1/2 tsp ground nutmeg 1/2 tsp ground cinnamon 1/4 tsp ground cloves 1 1/4 cups sugar (Florida Crystals) 2 Ener-G egg replacers beated with a fork 1 C all purp flour 1/2 C self rising flour 1 tsp baking powder (prefer.alum-free) Mash first 7 ingredients in a large bowl using a fork. Then stir in Ener-G. Combine dry ingredients and stir in to wet mixture. Pour into a loaf pan that has been well greased with margarine. Bake at 350 degrees for 50 minutes. Then turn oven off and let sit in warm oven for 25 more minutes. Let cool a bit and serve warm with some Earth Balance or other vegan margarine! YUMMY!
