I was experimenting various vegan cakes as my daughter's birthday is coming up and I wanted to make a healthy alternative for my daughter, myself and some vegetarian friends, so tried making the chocolate one, only without the egg replacer as I don't have it, and it came out pretty good. Question: what are your views on jam? I have not bought jam for a long time, and the last I bought had only fruit in it, no sugar added nor any chemical additives. Guest guest Posted July 26, 2001 Report Share Posted July 26, 2001 My daughter just had her 2nd birthday and I made a Depression Cake (sometimes called Wacky Cake) which was used during the Depression because of the scarcity of eggs and cow's milk. It was REALLY good, even my omni brother ate it, only after assurances that there was no tofu or breast milk in it!!! (LOL, like I would put breast milk in a cake for our guests to eat). I used a store brand frosting, which was vegan except for processed sugars, but loaded with hydrogenated oils, but I figure once a year, what's the big deal. I was really short on time, but next year I'll probably make a frosting with Earth Balance or nut butter or something. Wild Oats has a brand of all fruit jams that I use in the occational PB sandwich for dd. They are sweetened with grape juice concentrate. Let me know if you want the recipe for the wacky cake.
