I didn't measure anything out, I just grab some of this, and some of that. ~gv Layered Bruschetta Polenta 1 Package of ready-made Polenta Chopped Fresh Tomatoes (I think I chopped up 5 small/medium sized tomatoes) Minced Garlic (I used a few tablespoons worth) Fresh Herbs (oregano, parsley, whatever you like or have on hand) 1 Package of Vegan Rella - Mozzarella Style (I sort of sliced/chopped it into small pieces) Olive Oil (I mixed in about 2 tablespoons and drizzled some over the top layer) Salt and Pepper to taste Preheat oven 350. Lightly oil/spray baking dish. If using the premade polenta, slice into half-rounds about 1/2 " . In a bowl, combine the rest of the ingredients. Alternate layers of polenta with tomato mixture. Bake for 30 minutes or so. I also had zucchini with breadcrumbs in the oven at the same time. I had both dishes covered with foil until the last few minutes. I really like how this dish turned out. I think next time I may add a few other veggies to the mixture as well as some tofu. It was great with the zucchini and a simple salad for dinner. > Do you have any " quickies " that delight your family that you would be willing to share? Guest guest Posted July 24, 2001 Report Share Posted July 24, 2001 " Vegetarian Sloppy Joes " (Makes 3 Servings) 4-6 Tablespoons Sloppy Joes Sauce 1 Cup Veggie Recipe Crumbles (Morningstar Farm Brand: Griller's Burger Style) 1 Snow white mushroom (minced) 1/4-1/6Tablespoon (minced) carrot 1 Tablespoon (minced) onion 1 Tablespoon (minced) cilantro 2 Tablespoon vegetable oil 3 Small pieces of lettuce, drained 3 Hamburger buns Cooking Instructions: 1. Preheat cooking oil. 2. Sauteed mushroom, minced carrot and onion, over medium heat (3 - 5 minutes). 3. Remove from heat; add burger crumbles, cilantro and " Sloppy Joes Sauce " - mix evenly. 4. Cover both sides of bun with lettuce pieces. 5. I don't know about you, but they sure scare me!
