Vegetarian Lunches for Day Care

My 3yr old vegetarian son is starting Nursery School this fall and I

could use some

lunch ideas. Especially ones that are easy to eat neatly. I don't

want to send soy

butter and jelly every day.

Any suggestions are appreciated.

My son is now six, and has been attending preschool/

school since he was three. After all these years of packing

vegan lunches, we're pros!

 

If you can warm up lunches, try tofu pups sliced and mixed

with vegetarian baked beans. My son has always loved plain

pasta mixed with steamed broccoli or peas and with a little olive

oil and nutritional yeast sprinkled on it. And leftovers from the

previous night's dinner are always easy (bean burritos, vegan lasagne,

 

Chinese dumplings).

 

Sometimes I make a dip out of silken tofu, a little vegan mayo,

and herbs for him to dip carrot and celery sticks into. Sometimes

he just likes a carton of soy yogurt, some sliced fruits and

vegetables,

and a heavy-on-the-nuts trail mix.

 

As for sandwiches, pb & j can be spread on a whole wheat tortilla and

rolled up, or try mixing pb (or soy or almond butter) with shredded

carrots,

coconut, raisins and cinnamon. My son also loves " turkey " tofu slices

with

smashed avocado, shredded carrots and sprouts, as well as hummus

on a bagel.

 

We always had a carton of rice or soy milk at the preschool, so Ethan

could have that whenever the other kids had cow's milk. All of his

teachers have always commented on how good his lunches look - they

wanted me to pack theirs! And since Ethan's vegan foods look like his

classmate's (pb & j, pasta, burritos, hot dogs), he never stood out

as eating " different " (i.e. tofu, seitan, etc.) food.
