Here is the *real* birthday cake I used for my toddler's special day that

impressed both omnivores and vegans. I love the simplicity of this cake,

most of the ingredients you have on hand for a quick chocolate fix. I got

this recipe from <How it all Vegan>, a great vegan cookbook with a special

area with kids recipes and lots of ideas for earth friendly cleaners. I

recommend doubling the recipe if you want to make a round two layer cake or

a large rectangle one.

 

Auntie Bonnie's Wacky Cake

 

1 1/2 cups flour

4 tsp cocoa or carob powder

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

3/4 cup dry sweetener

3/4 cup soy milk

1 cup dry sweetener

1 1/2 tsp vanilla extract

1 tbsp vinegar

5 tbsp oil

1 cup cold water

 

Preheat oven to 325* F. In a large bowl, stir together the flour, cocoa

powder, baking powder, baking soda, and salt. Add the sweetener, vanilla,

vinegar, oil, and water and mix together gently until " just mixed. " Pour

into a lightly oiled cake pan and bake for 45-50 minutes. Test with fork

to see if done. When cooled ice and serve.

This recipe looks easy enough. I'm confused about the amount of dry

sweetener though--is it 3/4 cup or 1 cup? It's listed twice. Also, have you

made it with whole wheat pastry flour or any other kind of flour besides

white?
