Guest guest
I'm having a birthday party for my daughter soon and was thinking of making her a Rolie Polie Olie birthday cake, but dont' want to use chemical food coloring. Any suggestions on non-yucky frostings and colorings to make a cake for her that looks like her favorite TV personality? I already have lots of cake recipes. TIA, Sandra
Guest guest
My biggest problem was the frosting also... we don't eat refined white sugar, so that eliminated powdered sugar frosting. Search the web for " Fluff Frosting " , you cook flour and (soy) milk, then beat butter (soy margarine) with sugar (evaporated cane juice) and slowly add the flour/milk pudding while beating. It is unbelievably good, and has fooled many non-vegans, including my white-bread mother-in-law. For colorings -- beet juice for pink, carrot juice for orange... I'm not sure of the other colors, my 4 year old girl only wanted PINK. Very Pink! Have fun. Guest guest
These look like the fluff frosting (with Karen's substitutions), except they also include vanilla: http://www.123easyaspie.com/frost46.html http://www.melborponsti.com/frosting/frost002.shtml http://www.recipecottage.com/cakes-icing/boiled.html I also found a handful of others here that look good: http://vegetarian.about.com/sitesearch.htm?terms=frosting & SUName=vegetarian & type=0 & TopNode=3042 & Action.x=10 & Action.y=13 Lots of luck! Guest guest
Even better, I found the recipe: Put 1/4 C. flour in a small saucepan, and slowly whisk in 1 C. soymilk. Whisking constantly, cook until it becomes a thick pudding. Set aside to cool, covered so it won't form a skin. With a mixer, beat together 1 C. soy margarine and 1 C. evaporated cane juice at high speed until fluffy. Add the pudding mixture and 1 t. vanilla and continue beating until very fluffy and no longer granulated. This is the best frosting I've ever tasted... and beautifully smooth, easy to decorate with. The finished product does need to be kept cool until dessert time, it melts easily. My favorite dessert cookbook (doesn't include this recipe) is Fran Costigan's " Great Good Desserts " . It has a recipe for " Chocolate Cake to Live For " that I use at every occasion I can, non-vegans think I'm kidding -- it is SO rich and chocolaty, as well as vanilla cakes that are also quite good and light. Have fun. Guest guest
Does anyone know if you can replace the sugar with a liquid sweetener (like maple syrup)? Karen L. If you want a maple sugar type sweetener; I'd try maple sugar powder. Peace, Laura
Guest guest
Has anyone used Stevia in place of sugar in recipes? My mom is diabetic so I was thinking of trying it. We usually use beet sugar or Sucanant. Thanks, Linda
Guest guest
I never used stevia in recipes, but I do use it in tea and I like it a lot. There is a book titled " Cooking with Stevia " , my friend's mom has it and apparently the recipes taste great. my friend Melissa told me that her mom had to prepare some desserts with stevia one Xmas for Melissa's aunt and her husband and daughters, as none of them eats sugar. Melissa said the pastries her mom made for them were delicious and now Melissa wants to also give up sugar and make desserts with stevia. I linked the title to the page where you can get it. There is also a book dedicated to exclusively to desserts with stevia, it's called " Baking with Stevia " . Hope this helps. Guest guest
> Has anyone used Stevia in place of sugar in recipes? It's a bit tricky. I like agave. Although, I've only found it in liquid form at this time. It doesn't have that aftertaste that Stevia does. Peace, Laura
