cheese alternatives?

Does anyone have a suggestion for a tasty cheese alternative? My son loves

cheese, both grated on his pasta and in slices on sandwiches, but I would

like to move him off dairy primarily for allergy reasons, but we are moving

more toward veg with him. We have successfully substituted Rice Dream for

milk, but the cheese alternatives don't taste like the cheese he is used to

eating. I think the taste of rice cheese is ok, but wish it didn't have

casein in it. The Vegan slices were just too different in taste and they

don't melt well. Suggestions?

First I would suggest the " Uncheese Cookbook " . Lots of recipies for all

different types of cheeses.

Also nutritional yeast is our favorite to use with many recipies.

The tofutti slices and shredded cheese is worth using sparingly.

He needs time and you need to be encouraging until he gets used to the the

non-dairy cheese. I've found most kids are pretty accepting if you present

it as another food not a replacement food to be compared to the " original " .

 

As you have noticed the casein is in most of the alternative cheeses because

that is the " melting " agent.

 

We make a " cheese " sauce out of nutritional yeast that the family loves.

It's great for " macaroni and cheese " or spreading on bread. The original

recipe was from The Farm Cookbook.

There is one product that we really like: Soymage Vegan Low Fat Mozzarella

Mind you, this does not melt like regular cheese, but the flavor is really

good. I've had success making bagel pizzas by mixing the grated cheese with

the pizza sauce and a bit of olive oil and cooking on bagels in a 400 degree

oven for 10-15 minutes. Adding moisture (the sauce) to the cheese seems to

help it melt and appear more " normal. "

 

My kids love these.

 

Also, Tofutti makes a great cream cheese substitute: Better Than Cream

Cheese. Believe me, it is!

Thanks to all who responded about the alternatives to dairy cheese. I shall

look around and see what I can find at the local Whole Foods store.

 

Yes, I think the issue is one of getting familiar with other tastes, not

replacements because that makes it seem like I am depriving him of

" regular " cheese. He is ok with chocolate rice milk but didn't like the

plain version because he said it was too sweet. Hmmm...

 

I have never used nutritional yeast. I'll have to learn more about that.

 

On another note, we recently tried Earth Balance spread and everyone loved

it! Thanks to whoever suggested it. Even my non-veg husband said was the

best spread he has tasted!
