Vegan Pumpkin Pie

Here's a copy adapted from PETA

 

Pumpkin Pie

 

1 1/4 lbs tofu (I used Mori Nu Extra Firm, well drained)

2 C. pumpkin puree

3/4 C. maple syrup

3/4 C. sugar

1/3 C. rice flour

1 T. cinnamon

1 t. ground ginger

1 t. ground nutmeg

1 9 " pie shell

 

Preheat oven to 400°

Blend all ingredients until smooth. Pour mixture into unbaked pie shell. Bake

for 30 min.

Reduce heat to 350° and bake another 30-45 min. or until set.

What kind of pie shell do you use? All commercial ones have butter and eggs in

them...

I used Maple Tree...Maple Shade...Maple Something. It's whole wheat and only

contains flour, salt, oil, and maple syrup...if my memory serves me. But then,

I can't even

remember the brand, so don't trust me!

LOL Linda, it's ok, thanks. I searched here, but could not find a vegan pie

shell.
