Guest guest Posted October 19, 2001 Report Share Posted October 19, 2001 Here's a copy adapted from PETA Pumpkin Pie 1 1/4 lbs tofu (I used Mori Nu Extra Firm, well drained) 2 C. pumpkin puree 3/4 C. maple syrup 3/4 C. sugar 1/3 C. rice flour 1 T. cinnamon 1 t. ground ginger 1 t. ground nutmeg 1 9 " pie shell Preheat oven to 400° Blend all ingredients until smooth. It's whole wheat and only contains flour, salt, oil, and maple syrup...if my memory serves me. But then, I can't even remember the brand, so don't trust me!
