Guest guest Posted October 20, 2001 Report Share Posted October 20, 2001 How about a ratatouille? Just heat some olive oil in a skillet, saute an onion & a few cloves of garlic. Add some zuchinni, carrots, colored bell peppers, or whatever veggies you have available. When everything is getting tender, add a can of tomatoes, undrained and some basil, thyme and oregano, s & p. Heat through. You can add some cooked white beans, for a complete meal if you want. Voila!
