Guest guest Posted November 1, 2001 Report Share Posted November 1, 2001 I have always been allergic to molds, but until recently, never thought too much about the effects of mold and yeast-related foods on my overall health and not just on respiratory symptoms. (I don't know why it didn't occur to me earlier.) A conversation with my son's alternative health practitioner started my investigation of the subject of yeast overgrowth and mold allergies and so many symptoms match what I have been experiencing, especially during the last 10 years. Here's where I need help. Most of the yeast and mold elimination diets include lean meat and exclude SO many other staples: breads, pastas, nuts, tofu, mushrooms, vinegar, tempeh, fruits...between the two diets there isn't much left! There's especially not much left to eat for a vegetarian. I really would like to try the elimination diets for a month and see if my health improves, but I don't know how to prepare a menu that gives me adequate nutrition and protein without all the foods I usually rely on for protein (like nuts, rice cheese and tempeh). Has anyone any recommendations for books to read on this topic or websites with diet helps? Or personal experience or advice to relate? Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 Dear Olivia, Fermented foods should be avoided because they make everything else ferment as well and that helps creating the condition you want to get rid of. Fruit is brought to a minimum because these organism thrive on sugars. That might be a reason why other starches should also be decreased, but not totally eliminated, like I don't see why you cannot have pumpernickel bread and soy pasta. I'll do some research and get back to you on this. Forgive me, but I don't remember if you are lacto-ovo-vegetarian or vegan.
