Quick Xmas cookies

I have never before submitted a recipe (I am no great chef) but these

cookies were so quick and easy I thought someone out there might want to

give them a try. We mixed equal parts apple sauce and natural peanut butter

together and then added coconut and rolled oats until we had a

'rollable'/formable mixture. We threw some raisins and crushed breakfast

cereal into the mix and then made balls which we rolled in crushed cereal.

(We used a flake type cereal but I think others would work as well) When we

were finished, we put them in the fridge and let them set for around 30

minutes. I have also made this type of cookie and baked it for 10 minutes

and that worked. Sorry there are no measurements but that's what I loved

about these cookies. And, when I say 'we', I mean my 21mo old and myself. He

helped out and there was no chance of his messing up the recipe. Merry Xmas

Thanks for sharing this, I'll be trying it with my 28 months old! She loves to

help me in the kitchen! Just a question, did you use homemade applesauce? If so,

how do you make it? Because I follow the fit for Life Principles so I always

prefer not to cook fruits...

we'll try this tonight. My 22 mo. loves to cook too

and eventhough he doesn't follow the recipes (I don't

either for that matter) we haven't had anything we

couldn't eat yet! :-)

I used an unsweetened organic applesauce from the hfs. In the past, I have

made my own applesauce by peeling, coring and slicing apples, adding

cinnamon and boiling for 20 minutes. This lasts at least a few weeks if

stored in a jar in the fridge. If you prefer not to cook your fruit, maybe

you could try to puree apples in a blender/food processor. Or just go with

chunks! :)Madeline
