Guest guest Posted January 7, 2002 Report Share Posted January 7, 2002 The other night was garden pizza with brocolli, tomatoes, green peppers, onions, mushrooms-sauted with some vegetarian pepperoni and lots of cheese-we're Lacto-Ovo's- and an italian salad. Tonight wasn't as nutritious but fast-Morningstar Veggie Corndogs, chips and dip with vegetarian baked beans-like picnic fare. I had a delicious vegetarian sub with lots of tomatoes, peppers-salad and jalapeno, olives and other stuff-UMM!!! I started with veg broth, addes 4 peeled cubed potatoes, a bag of frozen veg soup mix (carrots, onions, celery, okra, peas, green beans)I sauteed some fresh garlic roughly chopped and added to soup along with blk pepper, ground cumin and curry. (I love curry so this ended up a curry stew) if you cook this for a little while (over an hour) its better because the potatoes break down making the broth nice and hearty, I also added a tablespoon of flour to thicken mine a bit more.
