Guest guest Posted January 10, 2002 Report Share Posted January 10, 2002 Lacto-Ovo Yesterday we didn't make it home me in time to cook, so I bought convience foods-kids frozen grill cheese dinner for dd. For me, Morningstar meatless ham and cheese hot pocket with Uncle Beans vegetarian vegetable stirfry as a side. Not very healthy but I am hypoglycemic and needed something extremely fast. Today, I had Mushroom Fettucini Alfredo with a spinach salad with sliced 'maters, mushrooms, and cukes. We also had sliced pears. I had some leftover stirfry for lunch and for breakfast I had pancakes, scrambled eggs with cheese and meatless sausages by Boca-actually I didn't eat it, it was nasty. I had four classes today and needed a big breakfast. I have to have fast foods for the next couple of months cause I have four classes with 10 min in between, if the professor doesn't run over. Guest guest Posted January 10, 2002 Report Share Posted January 10, 2002 Last night we had cheese and veggie enchalada's (sorry my spelling is horrible)I wrapped two slices of cheese and roasted red and yellow pepper, onion, sliced garlic, and mushroom in corn tortillas, I crumbled an AMY'S California burger on top and put a can of enchalada sauce and sprinkled more cheese on top, baked until cheese bubbly and golden. in regards to cheese, are there any cheese substitutes that actually taste good?? Guest guest Posted January 10, 2002 Report Share Posted January 10, 2002 Tues night I made stuffed green peppers for two.Preheat your oven to 400.Cut the tops off of two peppers, boil in water until tender (not too long, you don't want them to fall apart when you try to stuff them) Boil a bag of brown rice. In a skillet saute onion, garlic, and diced mushroom. When the veggies are almost done, add 3/4 can of stewed tomatoes (try to use all of the tomatoe chunks and save the saucy part of the end)Cook a veggie burger in the microwave and crumble it into the skillet. Add the rice to the skillet when its done. Mix all of this well and heat until warm. Stuff the peppers with this mix and put in a glass baking dish, I then poured the remaining tomatoe sauce (juice) on top of the peppers (to prevent drying out while the cheese melts) Put cheese on top and put in oven until cheese melts.
