Hi,

 

I just bought " The Uncheese Cookbook " to help my husband wean himself off

cheese. To be really honest: I'm tired of trying new recipes and not

liking the taste (me nor my husband)!!!!!!!

 

So can some one help us out here? I'm going to be having a baby in 2 months

or so and *really* need to expand my repertoire of recipes!

 

Ok. For those of you who have this book, which recipes do you like the

best or which ones seem to taste good to many people?

I really like the curried cauliflower soup. Instead of adding all the

individual spices I just add some curry powder. I make it less curried so that

the kids like it too. I have also made this soup using different veggies like

broccolli or even mushrooms.

I just got this book too. Just tried my first recipe from it a couple nights

ago: 'Potato, Tomato & Cheeze Chowder' (p. 46). My non-veg husband thought

it tasted like real cheese. It was very thick and filling and we all really

liked it, even my picky 3-year-old!

 

I'd like to hear others' recommendations from the book as well.

Your husband may not b e willing to eat any of the fake cheeses in the book.

Personally, I don't have the book, but people have cooked lots of things for

me. I can't stand the taste of nut. yeast, which is a common ingredient to

most of the recipes, and while cashew based dishes are nice and creamy, I

still don't think they make decent " cheese " . I keep waiting for a good

cheese sub, but haven't found one I like. In the meantime, when I'm

avoiding dairy (I'm a dairy-minimalist, rather than a vegan, for now anyway)

I prefer smoked tofu. It's closer to cheese than anything I've found.

Yeah, in the book " Table for Two " Joanne Stepaniak includes a recipe for " pizza

cheeze " that uses only firm tofu and light miso. I haven't tried it yet, but it

sounds delicious.
