Guest guest Posted January 22, 2002 Report Share Posted January 22, 2002 The last couple of days were a vegetarian burger with all the trimmings. A simple salad with spinach leaves and tomatoes. The next night we had Pasta with a marinara sauce and meatballs. Another simple spinach salad and garlic bread. Another we had frozen mini bean breads, another simple salad, and sliced pears. Day after that we had tortillas with refried beans-(found out after we were eating them that they contained lard)-got to make my own or find a vegetarian alternative. Anyway, we had that with all the trimmings, sliced tomatoes with Italian dressing,boiled potatoes and fat free chocolate pudding. Tonight we had vegetarian pizza-split-half cheese and veg. soy pepperoni-for daughter, and half vegetable and cheese for me!!! Quote Link to comment Share on other sites More sharing options...
Guest guest Posted February 1, 2002 Report Share Posted February 1, 2002 I cooked some spinach, eggplant, and garlic, pureed it in the blender with ricotta cheese and stuffed some jumbo shells with this, poured marinara over and baked a few minutes to heat. sorry, we still eat cheese (and are having a hard time giving it up) so lots of our dinner favs have cheese. can anyone give me some reasons or ideas to help us give up dairy all together? I know that sound ignorant but I have a hard time convincing my husband of these things without substantial information. Great stuff seeking new owners in Auctions! http://auctions.
