I am a recently converted vegetarian (I had been eating chicken and fish only for the past year or so - which I just stopped eating) and my husband has just gone from being vegetarian to vegan. We will be raising our daughter vegetarian (not vegan). As this is all fairly new to me, I find myself doing to my husband (with dairy) what I DONT WANT others to do to me (with meat). That is - its just got milk in it, you can eat it!!! Its sooooo bad, I know. Ayone else in this situation. I want to stop doing it but it just pops out sometimes. Have you tried the Uncheese Cookbook by Joanne Stepaniak? Or Tofu Cookery also by Joanne Stepaniak? They both offer great ideas for alternatives to dairy. It's also pretty easy to just substitute soy or rice milk for regular milk in most recipes, margarine for butter, or soy yogurt or soy " sour cream " for the dairy versions. Giving up dairy was the hardest part of becoming vegan but I haven't had dairy for close to ten years now. It's that first step that's always the hardest. Try making substitutions and check out dairy alternatives. It's not as hard to keep dairy out of your diet as you may think.
