Guest guest Posted February 22, 2002 Report Share Posted February 22, 2002 In two weeks, my 5 yr old and I are traveling Greyhound to Louisiana. We will be on the bus for 10- 13 hrs. We've traveled Greyhound many times before but never as a vegetarian. I always bring my food because they charge ten times more at these places. It lasts fairly well even without being cold for your trip length. Also marinated tofu slices are a good idea, or tempeh strips. Bean salads and or grain mixes are also an idea, cous cous is light and versitile. Nori rolls can be made with any filling, veggies or tofu inside. wraps with a variety or fillings or pita stuffed with veggies and beans or tvp., pick your seasoning. I would try to reduce flatulence on a crowded bus for so long.. plus it's healthier.. I suggest as always fresh ingredients and/or filled Tupperware (you can use the cover upside down as the cutting board). Have plenty of fresh fruit and veggies(oranges, bananas in Tupperware or hanging outside of the bag, but be careful not smashing into people, apples, avocado, cucumbers, cauliflower, peppers, ). You're kid we'll thrive just fine on that, and probably be more relaxed without the over-sugary/proteiny food. If you want to be more 'creative', make vegan sushi in advance, or a big rich and colorful salad. yum yum. Guest guest Posted February 27, 2002 Report Share Posted February 27, 2002 When we travel, I bring plenty of fresh fruit, and I make " veggie wraps " for something more filling. I fill tortillas with a mixture of grilled, steamed and raw veggies, then roll it up and wrap plastic foil around it to keep it together. You can easily make several ones in advance and keep them in a zip-log bag or in a Tupperware container. Just a suggestion: Don't add tomatoes and let the steamed veggies cool down and drip in the pot, so that the tortillas don't get soggy. Combinations we like are: Grilled eggplant or zucchini, avocado and alfalfa or other sprouts; steamed broccoli, red cabbage strips and grated carrot, roasted pepper, arugula and mushrooms. If your child is more of a nibbler, you can make the wraps for you and bring for him peeled carrots and cucumber, cherry tomatoes and some raw nuts (better not use any toasted nuts) in addition to the fruit. Guest guest Posted February 27, 2002 Report Share Posted February 27, 2002 Thanks. I've had alot of embarassing things happen on the bus, and that's one I want to avoid. LOL! I was thinking about veggie jerky. I got some the last time at the health food store and it was good. THat would be great to tag along. I like granola bars and I love dried fruit like cranberries. They would be sweet enough not to get my already hyper child too hyper. I think one large bottle of water is good enough because we don't want to drink too much on the bus for obvious reasons.
