Its goal - healthier lunches as well as vegan and vegetarian options for students.Sophomore Leo Rodriguez, junior Jill Summar, junior Brittney Allen, senior Emily Price, and Heather Bierly, the club's sponsor, launched a petition in order to obtain healthier lunches as well as vegan and vegetarian options for the school's cafeteria. " The current salad bar options are not suited for a well-rounded meal, " the Vegetarian Club petition states. " Especially for anyone who does not consume or cannot consume meat due to religious, health, or personal choices. " Rodriguez decided to launch the club late last spring after realizing several other clubs for students with similar interests existed, but there wasn't one for vegans and vegetarians.Some students aired their concerns to cafeterian personnel, who have made subtle changes - occasionally offering such healthy fare as carrots, chopped celery, and cabbage.Rodriguez said the group's membership fluctuates, but an average of 25 students attend the Vegetarian Club's monthly meetings.Jim Huffman, director of child nutrition for Tulsa Public Schools, said he feels some vegetarian options aren't healthy. " I would worry that they're not getting the nutrient content they need to continue growing, " he said.(Note: Yet breakfast at the schools often include doughnuts with chocolate sauce, and lunch can consist of chili cheese fries or cheese poured on corn chips, cheeseburgers, chicken fried steak, and other high-fat options.)
