Guest guest Posted March 8, 2002 Report Share Posted March 8, 2002 Just wondering if any one has ever made a birthday cake that is Kosher for Passover and vegan? my daughter's b'day is Mar 29 and she wants her party on the actual day...I have a pretty good vegan cake recipe (for the rest of the year) but not sure how that Matzah meal works in an eggless cake. Guest guest Posted March 8, 2002 Report Share Posted March 8, 2002 Jackie, et al... I've substituted Pesach cake flour for matzo meal, and substituted apple sauce or mashed bananas for eggs. Both work well in Passover cake mixes, or from scratch. I always estimate on proportions.... ususally using the consistancy of the batter as a guideline. One can always add more matzo cake flour or applesauce as needed. There's a great Pesach cookbook " Matza 101 " by Jenny Kdoshim & Debbie Bevans. It's not a vegetarian cookbook, but most of the recipes are vegan or can be easily altered. VRG online has some good vegan recipes for Pesach, as well. Enjoy & Chag Sameach. Michelle (PS... It really doesn't matter what you do, eggs or no eggs, passover cake tastes like wet cardboard. Are you Ashkenazi or Sephardic? if you use kitneot (Sephardic tradition of using rice, corn & beans) then you can use bananas and soy yoghurt to try to give your cake some type of edible texture.
