My five yr old daughter resisted at first too for us switching to being lacto-ovo's, I even caught her eating a burger at a neighbors house. But, I kept explaining to her that we were no longer eating animals. We have a cat so I asked her if she would eat Spicy. She said, no. I said that's what its like to eat meat. You might as well be eating the cat. My daughter loves animals so this did not sit well with her. I explained to her that the 'meat' is actually animals with feelings. So, she changed. Plus, I kept our meals simple and not exotic or gourmet. We eat food she is used to, using meat substitues and buying products like Morningstar Farms. She has even refused foods at school where teachers have told her that she was suppose to eat meat when she informs them that we were vegetarian!!! She makes her own decisions about food when I'm not there. She now has very strong convictions against eating meat, stronger than my own!!! So, don't change from pizza to thai cuisine or anything like that. If your kids never liked vegetables before, use sauces. My daughter now eats vegetables she would refuse to eat when we ate meat. Kids usually love corn on the cob, hide beans in taco mix with veggie burger crumbles, buy lots of fruits and make smoothies etc. My daughter used to hate smoothies. She hated nearly all vegetables but now she says, " Look mommy, I love my vegetables!!! " She also told me that she will teach her children to eat 'fake meats' as she says. My daughter eats cheese pizza, or with veggie pepperoni, mushrooms, and we have even ordered a olive oil-(no sauce), white cheese, mushrooms and spinach pizza. We eat chili, have soy burgers, sloppy joes. veggie corn dogs, veggie pot pies. veggie hot pockets, spaghetti, fettucini alfredo, poor man's pesto, everything. If your're vegan, there are vegan cheeses. But, don't dramatically change your menu and your kids won't even notice the difference. After two weeks of eating vegetarian, I finally told my daughter, " Did you know you haven't been eating meat for two weeks now? " She was very surprised cause she couldn't tell the difference!!! That spinach mushroom pizza sounds excellent! They didn't have a problem cutting out dairy (where we started) but started wondering " where's the beef? " when I cut that out :-) I think you're right, the trick may be buying them vegan chicken nuggets and hot dogs at first (they're still expensive here.....small cattle raising town) They do tell their teachers already that they don't eat/drink dairy.....I think they like having control of what goes in their bodies.
