Canned versus Dried Beans

Does anyone know if there is a nutritional advantage to cooking dried

beans for recipes instead of just opening a can? I'm willing to take

the extra steps if it matters. Thanks!

Yes. Comparing my canned black beans to dry, the dry are lower in sodium by

quite a bit (canned 380, dry 20), higher in fiber (canned 5, dry 15),

higher in protein (canned 6, dry 9), and 5% higher in iron.

As far as I know, the canned stuff has added salt and maybe preservatives? My

nutritionist was saying, of course dried is better, but if all you have

time/patience for is canned then at least do that! Also, I'm not so sure

about the effects of canning on the food inside. So, in my opinion dried is

better, but I don't have a basis in facts. I use canned because I run two

different businesses, plus full time mom and don't remember to put the dang

beans in water the night before! LOL!

I know canned foods tend to have more sodium, other than that I'd say look at

a can and compare it to the nut. info listed on the bulk section of the beans

I wash off the canned beans, though I cook both, sometimes the convience

of opening the can out weighs the fact that it could probably last 100

yrs. LOL!
