Comparing my canned black beans to dry, the dry are lower in sodium by quite a bit (canned 380, dry 20), higher in fiber (canned 5, dry 15), higher in protein (canned 6, dry 9), and 5% higher in iron. stacy >Does anyone know if there is a nutritional advantage to cooking dried >beans for recipes instead of just opening a can? My nutritionist was saying, of course dried is better, but if all you have time/patience for is canned then at least do that! Also, I'm not so sure about the effects of canning on the food inside. So, in my opinion dried is better, but I don't have a basis in facts. I use canned because I run two different businesses, plus full time mom and don't remember to put the dang beans in water the night before!
