Desparately seeking Vegan Waffles

Hello all,

 

I was just wondering if anyone has a good recipe for

Vegan waffles. My family loves waffles, however, the

brands I have found in my HFS are very expensive. I

have just gotten a chest freezer so it would be nice

to make and freeze some for the family rather than pay

$3+ per box of store bought ones.

 

I have already acquired a Belgian waffle iron, but I

can't seem to find any recipes in my dozen or so vegan

cookbook... go figure.

 

If I can't find a good waffle recipe I will have to

suffice for a good pancake recipe and try that out in

the maker.

 

Please help my family has been BEGGING me for

waffles!!

 

P.S. The healthier the recipes the better... ( I do

have a couple pancake recipes but they aren't very

nutritious, I need something they can eat as often as

they like.)

I modified my Dad's recipe and it works really well. I've also made it

without any of the oil and it works fine for non-fat pancakes. (I'm not

sure how it would work in a waffle iron with no oil though).

 

3cups flour (I use 2 cups whole wheat, 1 cup white)

3tsp baking powder

1/4c sweetener of your choice (I use unrefined cane sugar, if you use a

liquid you may have to reduce the other liquid a bit)

pinch of salt if you like

 

(combine dry ingredients first)

 

1/3 cup veg. oil

2 TBSP dry Egg replacer mixed with 3/4 cup water (the original recipe called

for 1 egg)

2-3TBSP Flax meal mixed with 3/4 cup water (You can use this to replace the

egg, but I often use both egg replacer and flax to make them a little more

fluffy and get my Omega 3s)

1tsp vanilla

2-3 cups soy milk (add until the mixture is pancake consistancy)

 

Mix it all together. I like to add some fruit too like 1 cup of blueberries

or some sliced apples.

There is a great waffle recipe in 'The New Vegan

Cookbook' (the picture of the waffles is on the

front). When my mom was alive she used to make a big

batch and freeze them. She thought it was the best

waffle recipe she'd ever used (vegan or not). I think

there are copyright laws against me posting it so I'll

send it to you privately.

Ironically, I just pulled out my old waffle iron today because I plan to

introduce waffles to my 19 month old very soon now that he has more teeth.

(I haven't made waffles since 1999 - just pancakes!) The following is a

simple recipe from Ten Talents that I used repeatedly and plan to use for my

child's first waffle:

 

Best Blueberry Waffles

 

Into a bowl put

4 cups oats, quick

1/4 cup corn meal

Then add

4 cups milk (soy or nut or water)

1/4 cup oil

Mix well together.

Next add

1 tsp. salt

1 tbs. lemon juice

1/2 tsp. vanilla (optional)

Fold in:

1 cup fresh or frozen blueberries

1 Tbs. honey (if berries are unsweetened)

Let stand at least 2 hours or in refrigerator overnight. Bake on hot waffle

iron 6-7 minutes.

I make my own with an organic buckwheat vegan mix available in bulk at my

hfs (not very expensive). To this mix I add soy milk, orange zest, frozen

berries (if they're around), and sometimes cinnamon. I guestimate the

amounts and go by the consistency. They are a bit heavier than regular

waffles but taste great (usually!). It takes a little experimenting but my

son still happily ate the waffles that didn't turn out as they always tasted

This one came from PETA's The Compassionate Cook and my non-vegan friends

rave about them. It's actually a pancake recipe, but it works extremely well

for waffles. Enjoy.

1 cup unbleached all-purpose flour

1 tablespoon sugar

2 tablespoons baking powder

1/8 teaspoon salt

1 cup soy milk

2 tablespoons vegetable oil

Combine flour, sugar, baking powder and salt in a bowl and mix thoroughly.

Mix in the soy milk and oil, and with an electric mixer or wire whisk, beat

just until the batter is smooth.

I received this one from the Vegetarian Times Weekly Recipe: I don’t

know if they’re good or not, but they sound yummy.

You may need to substitute something else for the honey for younger

babies.

Honey-Flaxseed Waffles with Caramelized Bananas

Makes 12 4-inch squares

Soy times three, plus flaxseeds equals a very healthy waffle.

* 3 Tbs. flaxseeds

* 1 1/4 cups unbleached all-purpose flour

* 1/2 cup soy flour

* 2 tsp. baking powder

* 1/2 tsp. baking soda

* 1 1/2 cups plain soy yogurt or plain nonfat yogurt

* 2/3 cup plain soy milk or nonfat milk

* 1/4 cup honey

* 1 Tbs. vegetable oil

* 1 large egg yolk

* 2 large egg whites

* 4 large firm, ripe bananas

* 2 Tbs. sugar

* 1 Tbs. fresh lemon juice

1. Preheat oven to 200°F. Coat waffle iron with cooking spray and

preheat.

2. Place flaxseed in coffee grinder or blender; process to measure 1/2

cup flaxseed meal. In large bowl, whisk together flaxseed meal with

all-purpose flour, soy flour, baking powder, baking soda and 1/4 tsp.

salt.

3. In medium bowl, whisk together soy yogurt, soy milk, honey, oil and

egg yolk. Add yogurt mixture to flour mixture, whisking just until

combined.

4. In small bowl, beat egg whites until they make soft peaks. Gently

fold into batter.

5. Ladle 2/3 cup batter (or amount recommended by manufacturer’s

directions for your waffle iron) into waffle iron. Close lid and cook

until waffles are golden, about 3 to 4 minutes. Gently open lid and

remove waffle with fork. Serve immediately or transfer to baking sheet

and keep warm in oven. Repeat with remaining batter, lightly coating

iron with cooking spray each time.

6. While waffles cook, peel bananas and cut into 1/2-inch-thick rounds.

Transfer to medium bowl and toss with sugar and lemon juice. Heat large

nonstick skillet over medium-high heat. Transfer bananas to skillet and

cook, flipping occasionally, until heated through but still firm, 1 to 2

minutes. Top each serving of waffles with 1/3 cup bananas.

Sorry that I didn't get to you before the waffle-friendly weekend.

 

Here are a few resipes that are family tested and well like by my household....

 

 

Sourdough Waffles

 

1 C. sourdough starter

1 C. lowfat soymilk

1 1/2 C. whole wheat flour

1/2 t. baking soda

1 t. baking powder

1/2 t. salt

 

Mix sourdough starter, soymilk, and 1/2 C. whole wheat flour.

Cover and let stand at rom temp. for 12-24 hours.

 

Preheat waffle iron. When ready to cook, mix the remaining 1 C. flour, baking

soda, baking powder, and salt in a bowl.

Add the dry mix to the sourdough liquid. Mix gently. Pour on to waffle iron

and cook until ready (this recipe seems t cook quickly. They are also

thicker/heavier than most

waffles, but very tasty.)

 

 

Basic Waffles

 

1 1/2 C. soymilk

1 1/2 T. lemon juice or apple cider vinegar

1 1/3 C. whole wheat pastry flour

3/4 t. baking soda

1/2 t. salt

1 T. oil

1T. maple syrup

 

Stir soymilk and lemon juice or vinegar together. Let sit for 2 minutes to

curdle.

Meanwhile, preheat waffle iron.

 

Wisk the flour, soda, salt together in large bowl.

 

Add the oil and maple syrup into the soymilk.

Gently add the wet ingredients into the dry ingredients until moistened. Do not

overmix.

 

Spray waffle iron with oil. Add batter to waffle iron and cook until steaming

stops. (This recipes takes longer to cook and the resulting waffle is more

" airy " .

 

There are some variations to this recipe, but I'm to lazy right now to type them

all in....)

 

 

Sunflour Oat Waffles

 

1 3/4 C. soymilk

2 T. lemon juice or apple cider vinegar

1 3/4 C. old fashioned rolled oats

1/4 C. raw sunflower seeds

3/4 t. baking soda

1/2 t. salt

1 T. oil

1T. maple syrup

 

Stir soymilk and lemon juice or vinegar together in a blender. Let sit for 2

minutes to curdle.

Meanwhile, preheat waffle iron.

 

Add all the remaining ingredients to the blender. Blend at high speed until

thick and creamy, ~60 sec.

 

Spray waffle iron with oil. Add batter to waffle iron and cook until steaming

stops. (This recipes takes even longer to cook and the resulting waffle is kind

of like an " eggy "

popover.

 

These recipes should give you a start!
