First of all you daughter eating edamame is not a waste even if she gets no nutrients from it...in my opinion. She is eating and liking green foods which is aways a plus in my book. When my son was her age there were lots of foods that came out pretty much the same as they went in. As he got older everything got digested better. Maybe he started chewing more and I know children digest things differently as they grow. If you grind things up they may get processed easier, but I think it is great practice for kids to eat things whole and get used to the textures and tastes of whole foods instead of just mush. Edamame is supposed to be easier to digest than other forms of soy, but beans, peas, corn, seeds, etc. often times come out looking very much as they looked going in...even in adults. I wouldn't worry too much about it as long as she is eating a variety of foods. Just be happy that she is probably the only kid on the block eating edamame! :-) Just a thought, will she eat it mushed up if you let her feed herself? I know lots of kids don't like to be 'fed' and especially at her age they like to do things themselves. That is probably why finger foods are such a hit. I know it might be messier handing the spoon over to her, but it might be let work in the long run.
