I had a recipe for lentil loaf but it was a tricky recipe and didn't always turn out. I love 'Amy's Loaf' (doesn't taste like meat! )but it is too expensive for 'everyday' use-I do keep a few on hand for emergencies. Even a casserole recipe that does not inclue pasta would be appreciated. I'm no gourmet so easier recipes will be especially appreciated! Veg or Vegan works as I'm fine with substituting what doesn't work for me! Feel free to email me directly if you like. Guest guest Posted July 18, 2002 Report Share Posted July 18, 2002 Hi Madeline- Here is a lentil loaf recipe my family loves. It also is good as leftovers for sandwhiches. I hope you like it. Karen Lentil Loaf 1 1/2c. red lentils 2c. water 1c. chopped onion 2 T oil 1 1/2c cheese or soy cheese 1 egg or egg substitute 1 t parsley 1 t thyme pinch of salt dash nutmeg garlic to taste Simmer lentils in water 25 minutes or so. Sauté onions in oil until translucent. Mix all ingredients together, bake in a loaf pan 375° for 35 minutes. Serve with mushroom gravy, mashed potatoes, steamed veggies. Makes good sandwiches as leftovers. Mushroom Gravy olive oil 1 1/2c mushroom chopped 1c. water 2 T cornstarch ½ t salt 1 t soy sauce Sauté mushrooms in olive oil. It also tells you how to cook beans from scratch. It's a fantastic book with lots of variety. I've used lots of the recipes and they're great. I love the mexican bean casserole.
