Any rice salad works also. heck! pretty much any kind of salad!! Peanut butter to dip fruits and veggies. Hummus or baba ghanouj (spelling??) for veggies. Sandwiches with hummus or baba ghanouj instead of mustard or mayo. veggie wraps (just use tortillas) smoothies soy cheese cut in cubes fruit, fruit salad, fruit soup marinated/baked tofu etc..... My friend has tried a couple, and even made a tofu fruit smoothie, which her son loved. Her next battle is similar to one that was already posted. Snack time. Each parent is supposed to bring a box of crackers or cookies for the class at snack time. She asked if she could bring apple sauce and the answer she got was no. Some explanation on how it needs to be crackers of cookies because of health safety concerns. I just can't believe how schools operate. It gives me more of a reason to homeschool when my son gets to that age. Anyway, thanks again for the suggestions! I've heard of schools requiring pre-packaged snacks so they know it hasn't been tampered with and so they can read the ingredients and know exactly what's in it (important for kids with allergies). However, there are things other than cookies that are pre-packaged. You can even get apple sauce in single serving containers. Has your friend made sure the school means " no apple sauce at all " rather than " no apple sauce from a common jar " ? I also thought of organic granola bars without nuts (Barbara's) or fruit leathers.
