Another creative idea is to make a little car, using a square or rectangle of bread. Clean out the bread interior, fill with savory dip (maybe hummus). On outside, paste round pretzels to bread using something edible (I think the savory dip would do) for the tires. Decorate sides, front and back of car using raisins, carrot sticks, celery, radishes, etc... Place a steering wheel in car using a stick pretzel and maybe a sliced round cucumber. I made 1st birthday cake out of there for my daughter (who's now 7) and I thought it was really good, and she ate it, too. Now of course she's a sugar fiend and probably wouldn't touch it! Oh well! Anyway, it's made with apple juice concentrate and fruits and spices. But I gave away the book recently, so if anybody has it, perhaps they can post the recipe. Guest guest Posted September 12, 2002 Report Share Posted September 12, 2002 Our daughter has been on a vegan organic diet, so for her first birthday in July we did the easiest thing in the interest of time -- ordered an organic vegan cake from an organic, vegan restaurant: banana cake with banana tofu frosting. It was tasty, healthy, and sweet (although I think maybe too sweet for her given her purist diet of the preceding 12 months). Of course, I don't know where you live, so I am taking it for granted you have access to such restaurants in your area. I made this for my son on his first birthday and he ate it up: Makes 1 single-layer 8-inch-square cake Vegetable cooking spray 1 cup plus 2 Tbsp. apple juice concentrate 1/2 cup whole raisins 1/2 cup chopped raisins 1/2 cup chopped dates 1/4 cup (4 Tbsp) margarine (or butter according to recipe) 1 1/2 tsp. ground cinnamon 3/4 cup whole-wheat flour 1/2 cup wheat germ 4 1/2 tsp. low-sodium baking powder 1. Preheat the oven to 325 degreesF. Coat an 8-inch square nonstick baking pan with vegetable cooking spray. Set aside. 2. Combine the juice concentrate, dried fruits, margarine, and cinnamon in a small saucepan. Simmer over how heat until the margarine is melted. Remove from the stove and let cool. 3. Combine the flour, wheat germ, and baking powder in a mixing bowl. Gradually blend in the fruit mixture, stirring just until mixed. Do not overmix. 4. Pour the batter into the prepared baking pan. Bake about 30 minutes. The cake is done when a toothpick inserted into the center comes out dry. Cover loosely with foil during baking if the cake starts to bronw. 5. To keep the cake from becoming dry and too hard for baby to gum, cover with aluminum foil or store in a plastic bag as soon as it has cooled slightly. I actually made cupcakes and ended up freezing them as she really enjoyed this! I think I found the recipe online, but can't remember the website. It also had a recipe for veg*n 'frosting'. White Cake (Makes two 8 " round layers or 12 cupcakes) Dry Ingredients: 1 cup whole-wheat pastry flour 1 cup unbleached all-purpose flour 1/4 cup soy flour 1 teaspoon baking powder 1 teaspoon salt 1/2 teaspoon baking soda Wet ingredients: 1/2 cup white grape juice concentrate, thawed 1/2 cup apple juice concentrate, thawed 1/2 cup water 1/2 of a 12-ounce block soft silken tofu 1/2 cup hot, well-cooked long-grain brown rice 1/4 cup canola oil Preheat oven to 350 degrees. Oil two 8 " round cake pans or 12 cupcake tins; set aside. Whisk together dry ingredients in a large mixing bowl; set aside. Combine wet ingredients in a blender container, and blend until very smooth. Add wet ingredients to dry ingredients, and stir to combine. Pour batter into prepared pans. Bake 18 to 25 minutes for cakes, 13 to 20 minutes for cupcakes, until a toothpick inserted in the middle of the cake or cupcake emerges clean. Cool slightly before turning onto a wire rack. Top with fruit-only fruit spread, Easy Chocolate Glaze, or White Frosting. Maybe they even know of someone else who makes them??? As we live in the city (NYC, just to be clear), I realize the restaurant selection is not likely to be as eclectic in more regional areas, so in that regard, we are quite fortunate. The restaurant is a small, homey place so I don't know where they stand on shipping to outside the metropolitan area, but here is their website and perhaps you can inquire. That would be fantastic if they can accommodate you. http://www.candlecafe.com/ Just for the record, there are a variety of veg*n restaurant guide books that list places all over the US as well as abroad. Forgive me if I can't recall them offhand, but I bet an Amazon.com search would yield a list. Or else try Barnes & Noble's website www.bn.com. Not one of those places is vegetarian so i don't get the benefit of a paid lunch. I bring my last nights dinner or i buy from my usual vegetarian spot in Brooklyn(i work in Manhattan, NY). Anyway, after 3 years of working here, i finally got the nerve to ask if a vegetarian resturant could be added to the list. To my surprise they were cool with it. Only problem is i couldn't find a vege spot close enough to deliver. To make a long story short: thanks to your like for the Candle Cafe, i can get the free lunch too. HA! I think it has the best vegan desserts in NYC. They are delicious and taste decadent. A few years ago a co-worker of mine ordered a vegan birthday cake for me from a vegan bakery in NYC (I can't remember the name of it) and it tasted like sawdust. Although, if you are on the Upper East Side, there are other veg places such as the Plum Tree (macrobiotic) on 1st btwn 77th & 78th (or 78th & 79th??), but the Candle Cafe definitely has the most well-rounded, expansive menu. I find most veg places offer predominantly Asian-influenced cuisine but the Candle Cafe is like a really nice bistro except with vegan alternatives to the usual fare.
