Looking for good german veggie recipe

Hi all,

 

I'm looking for some good German veggie dishes. A relative is doing a

themed Christmas and everyone is to bring a German dish. This is a

meat loving crowd so I'd like to impress them with how good a veggie

dish can be. Any ideas?

Spaetzle is a kind of macaroni and cheese dish you make by mixing up thick

flour dough and pressing it through a ricer and letting the bits drop into

boiling water; after it cooks you add milk and cheese, or the soy

substitutes.

 

There s a kind of potato ball dish I never saw a recipe for it, but it

resembles mashed potatoes mixed with flour, shaped into something like a

baseball, and boiled in broth.

 

There is a cheese and onion soup and many kinds of mushroom are dishes

popular in Germany.

Never tried any of these to know how they taste (except Spaetzel and

red cabbage, which are both delicious side dishes) but I found this

website of vegetarian german recipes. In my pre-veg*n days I used to

eat fairly regularly at a german resaurant where I lived and spaetzel

and red cabbage or saurkraut were side dishes on every meal on the

menu.
