Questions about recipes for Mongolia

Hi Melanie,

 

I have questions about expanding the ingredient list,

 

is there any flour or grains, rice, oatmeal?

Is there any thing like arrowroot powder (cornstarch)? Is there any baking

powder or vinegar any nuts or seeds? how about tomato sauce?

How about the availability of noodles and breads?

How about water?

 

I tend to be literal, so when I read your list I am thinking of literally

using nothing but those ingredients.

 

If you can get tomato sauce then I don't need to give recipes for making

tomato sauce.

 

Do you want recipes with only those ingredients that you mentioned or can

they be expanded with some typical staples that cooks ususally use? So what I

am asking what are the staples besides these foods, if there is any?

<< Hey, I forgot to say that there isn't much in the way of spices here in

Mongolia, but there IS fresh dill and cilantro available. Also, salt,

pepper, cinnamon, fresh ginger, green onions, curry, vegetable bouillion

(not a spice, really), and that's about it. Oh, and soy sauce and sesame

oil, thank goodness! The book will be for ex-patriates living in apartments

as well as Mongolians living in yurts, so I will need a combination of

recipes for modern kitchens and traditional wood stoves. Most everyone has

refrigeration, and if not, it's 0 or below for about 8 months of the year!

Yes, in fact there are lots of grains here, including buckwheat (they call

it kasha), etc. Most of your standard grains.

Corn starch

Baking powder no, but baking soda yes. Vinegar, yes. Nuts: walnuts, pecans

Yes.

Lots! Many of them made locally, but also packaged pastas from Europe.

I would still love to have a tomato sauce recipe!!

Yes, feel free to expand and just keep in vegetarian. All dairy products

available, too. Thanks so much for asking me to clarify these things - I

hadn't thought of it!
