For baking I usually use Ener-G Egg Replacer. It's a powder made mostly

from tapioca and potato starch that you mix with water. Depending on how

you mix it, it can be used to replace whole eggs, egg whites or egg yolks.

I've never had a problem with a recipe made from scratch using Ener-G

instead of eggs. It doesn't always work so well with packaged mixes,

though.

 

I also have a number of recipes for cakes and cookies that don't call for

eggs at all. I'm willing to share those if you're interested.
