Our book, Vegan In Volume <http://www.vrg.org/catalog/volume.htm> was designed with institutional food services in mind. We also have a Quanity Recipes packet <http://www.vrg.org/catalog/quant.htm> that is along the same lines. For quick ideas, like the situation you describe below, you could direct them to our website <http://www.vrg.org> and ask them to click on the " Food Service " link. This will take them to excerpts from our Food Service Update newsletter, which has many recipes.
