I am not much of a cook and last night i tried a new recipe for macaroni and cheese using tofu and soy cheese. i was hovering secretly in the kitchen hoping that my hubby wouldn't come in and ask what i was cooking. i waited until after he finished his dinner and asked him what he thought of it. he said it was good and then i asked him if he would be too mad if he knew that it was made with tofu and soy cheese? he looked at me for a minute and said, well, i liked the other kind better (i used to make it with velveeta), but it was good. i hated tricking him, but i really wanted him to try it with no judgement. i am hoping that he will be more open to new dishes now that he has tried two items that he probably never thought he'd eat in his life. blessings to you all, erin Quote Link to comment Share on other sites More sharing options...

Any chance you could share the mac and " cheese " recipe? I am hesitant to try new recipes myself, and it really helps to have someone's recommendation. Also, if anyone can offer favorite recipes, I am looking for a vegan bean dip and I have just purchased nutritional yeast for the first time and could use some guidance. Guest guest Posted April 8, 2003 Report Share Posted April 8, 2003 Regarding a bean dip - Take a can of garbanzo beans, throw in a food processor with one or two cloves of garlic, pinch of salt, and up to about 1/4 cup canola oil. Turn that machine on and voila! For variety, stir in some lemon juice, tahini, sun dried tomatoes or chopped olives. RE: nutrional yeast - Throw in the nutritional yeast to any sauce - red or white. I tend to put more into the white sauces (about 1/2 cup). Also, for stuffed baked potatoes, mix the inner parts of 6 baked potatoes with about 1/2 cup of nutrional yeast, about 1 cup of soy milk, and then extra goodies like chopped onions, salt/pepper, fake bacon bits, etc... > That is great news Erin, I wish you continued success, I understand how > difficult it can be having non-veg family. Guest guest Posted April 8, 2003 Report Share Posted April 8, 2003 sure! i would be happy to share. 1 box wheatless elbow pasta 1 package Mori-Nu firm tofu 1 brick(12oz) grated mild soy cheddar cheese 1 pat soy butter (optional) 1/4 cup plain soy milk cook pasta according to package directions. In a blender or food processor, blend tofu until it is smooth and without lumps. transfer the tofu to a saucepan and stir in the cheese over medium heat. continue to stir making sure not to let the sauce boil. add the pat of soy butter to the pasta(optional) before pouring the sauce mixture on top. add the soy milk as needed as you stir the pasta and sauce together. i actually got this recipe out of a book called Healthy Life Kitchen by Marilu Henner. so far this is the only recipe i've tried. but i'm excited to try more. let me know what you think when you make the mac and cheese. erin Brian Shaughnessy <ApMama2boys Tuesday, April 08, 2003 6:03 AM Re: tofu mac and cheese Soooooo, would you be willing to share the recipe??? Guest guest Posted April 10, 2003 Report Share Posted April 10, 2003 Robin FWIW, here is what I do with nut.yeast...boil ww noodles (kid friendly shape)and in a small bowl mix nut. yeast, tahini (if I have it),a little oil (this is a good way to use flax or similar oils because they are not cooked), garlic (my son has loved it since he was about 15 mos old) and spices (I use Herbamare). When the noodles are cooked, I spoon a few into the sauce bowl, mix it up and serve it to my son. He likes Kikkoman soy sauce on his but I think it is a personal preference. Quick and easy. To reheat, just add a little hot water to the sauce to make it creamy again. Erin, I would love a new mac & cheese recipe. The kids love it, and are already used to home made, not the uggy boxed kind. So far, I've had an easy time giving up the meat stuff. I haven't gotten away from all dairy. I drink soy milk, but I haven't managed to stay away from cheese and coffee creamer. So a good recipe that will help move me in that direction would be welcome! I've heard nutritional yeast has a cheesy flavor? I've got a bag of it in my growing " health " cupboard, but haven't figured out what to do with it yet. There have been times I've questioned my choices, thinking it's too hard and doesn't really make a difference, so knowing there are so many others out there, just a keyboard away, it a great feeling.
