Guest guest Posted January 8, 2000 Report Share Posted January 8, 2000 Grilled Italian Wraps Rush-Hour Flatbread Pizza Both of these look like they would be fun to make this weekend. * Exported from MasterCook * Grilled Italian Wraps Recipe By : Healthful Cooking, Mary Carroll, Star Tribune 12/30/99 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Sandwiches Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large yellow or red bell peppers seeded and quartered 1 medium eggplant -- thinly sliced 2 tablespoons olive oil 1 tablespoon balsamic vinegar 1 focaccia -- warmed (10-to 12-inch) 2 tablespoons low-fat Italian dressing 1/3 cup grated Parmesan cheese 1/2 cup shredded romaine lettuce 1/2 cup chopped Roma tomatoes Serves 4 In large self-sealing bag, combine peppers, eggplant, oil and vinegar. Seal bag and shake well to coat. Preheat grill. Grill vegetables, basting frequently with any liquid from bag, 10 to 15 minutes, turning once, or until soft and golden. Spread vegetables on focaccia, top with dressing. Sprinkle with cheese. Lay lettuce and tomatoes on top. Roll and secure with toothpicks. Cut into 4 pieces. Coat large baking sheet with nonstick spray. Place flatbread on baking sheet and brush with oil. Top with tomatoes, basil, and cheese. Bake 20 minutes, or until flatbread is golden brown and cheese is bubbling.
