Guest guest Posted January 8, 2000 Report Share Posted January 8, 2000 * Exported from MasterCook * Corn Chowder Recipe By :The Vegetarian Way, Virginia & Mark Messina Serving Size : 6 Preparation Time :0:00 Categories : REG Sheryl D Soups and Stews Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large onion -- coarsely chopped 1 clove garlic -- minced 1 green bell pepper -- coarsely chopped 1/2 cup chopped celery 1 tablespoon olive oil 6 medium potatoes -- diced 2 cups vegetable stock 2 1/2 cups corn kernels -- fresh or frozen 2 cups soy milk 1/2 teaspoon dried sage 1/2 teaspoon dried rosemary 1/2 teaspoon dried basil salt and black pepper -- to taste Saute the onion, garlic, green pepper and celery in the olive oil for 2 minutes. Add the potatoes and vegetable stock; simmer over low heat until the potatoes are tender. Add the corn kernels, soy milk and herbs; simmer for an additional 5 minutes. Season with salt and pepper to taste.
