Guest guest Posted January 9, 2000 Report Share Posted January 9, 2000 * Exported from MasterCook * Soft Oatmeal Cookies Recipe By : American Wholefoods Cuisine Serving Size : 16 Preparation Time :0:00 Categories : Cookies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup whole wheat flour 1 1/2 cups oats 1 teaspoon baking powder 1/4 cup chopped walnuts 1/3 cup butter -- (at room temp) 1/3 cup honey 1 egg 1 teaspoon vanilla extract 1/2 cup raisins -- (optional) Preheat oven to 375°. Combine flour, oats, baking powder, and nuts. Beat together butter, honey, and egg. Stir into oat mixture. Add raisins if desired. Drop by tablespoons onto an oiled baking sheet. Pat each cookie down lightly to form rounds 1/4 inch thick. Bake for 12 to 15 minutes until lightly browned. Leave on the baking sheet for a few minutes to cool, then transfer to a rack. Makes 16 cookies. Variation: Replace walnuts with pecans or shredded, unsweetened coconut.
