Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

16 ounces linguine

Olive oil flavored vegetable cooking

-- spray

1 teaspoon minced garlic

2 cups broccoli florets

1 cup sliced zucchini

1/2 cup sliced yellow pepper

1/2 cup sliced red pepper

1/2 cup carrots -- sliced lengthwise

3/4 cup fat-free chicken broth

1 teaspoon Italian seasoning

3/4 cup freshly grated fat-free parmesan cheese

freshly ground black pepper

Cook linguine according to package directions. Drain well. Spray noodles

with cooking spray and gently toss to coat noodles.

While noodles cook, spray non-stick skillet with cooking spray. Combine

garlic, broccoli, zucchini, peppers and carrots and pour into skillet.

Add chicken broth, 1/4 cup at a time. Stir in Italian seasoning. Cook

over medium heat, stirring constantly, until vegetables become tender,

about 4 to 5 minutes. Add more broth as needed to keep vegetables moist.

Combine hot pasta with vegetables. Gently toss. Top with parmesan cheese

and black pepper. Serve while hot. Makes 6 servings.

NOTES : When it comes to eating for good health, pasta and vegetables are

a natural choice. They're both fat-free and relatively low in

calories. They also provide an abundance of vitamin, minerals and

fiber. But all too often, pasta and vegetable dishes can be very

high in fat and calories... especially when prepared with

ingredients like butter, margarine and oil. This recipe remake for

pasta primavera shows you how to enjoy the great taste and good

nutrition of a pasta and vegetable dish, with a fraction of the

fat.
