The recipes are - 146 from the WRAL show 'Recipe Remakes' 42 from the WRAL show 'Lean & Loving It' 1000 from the Eat-LF mailing list archives To download go to - http://www.ukrecipes.co.uk/ Vegetarian note - you may want to substitute the chicken broth! * Exported from MasterCook * Pasta Primavera Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : remakes1 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 16 ounces linguine Olive oil flavored vegetable cooking -- spray 1 teaspoon minced garlic 2 cups broccoli florets 1 cup sliced zucchini 1/2 cup sliced yellow pepper 1/2 cup sliced red pepper 1/2 cup carrots -- sliced lengthwise 3/4 cup fat-free chicken broth 1 teaspoon Italian seasoning 3/4 cup freshly grated fat-free parmesan cheese freshly ground black pepper Cook linguine according to package directions. Drain well. Spray noodles with cooking spray and gently toss to coat noodles. While noodles cook, spray non-stick skillet with cooking spray. Combine garlic, broccoli, zucchini, peppers and carrots and pour into skillet. Add chicken broth, 1/4 cup at a time. Stir in Italian seasoning. Cook over medium heat, stirring constantly, until vegetables become tender, about 4 to 5 minutes. Add more broth as needed to keep vegetables moist. Combine hot pasta with vegetables. Gently toss. Top with parmesan cheese and black pepper. Serve while hot. Makes 6 servings.
